Seasoned Salmon Skin.  The skin has the scales intentionally left on because has an abundance of collagen needed for humans.  The skin will be too chewy, and not tasty without the scales.  The scales will make the skin be cripty when broiled perfectly, and it is one of the wonderful ingredients for Temaki (hand rolled sushi).
