NC Flounder is caught with pound net in local North Carolina water.  The catching method makes it possible to take the fish out of the water while alive.  Only when the fish is alive, it makes sense to cut the fish at the neck and at the tail to pump out blood.  As you can see, the cut peice is very clean and transparent.  It means the blood is completely cleaned out.  This is what we call bled or cut flounder.  The method was develeped by us, and we taught the fishermen how to bleed the fish.  This Cut Flounder is our best quality we can guarantee about it, and you will not be able to taste it anywhere else.
