These Dry Scallops are not for raw consumption.   Dry Scallops means there is no chemical volumizer used.  The chemical typically used is sodium trypolyphosphate.  When this chemical is used, the product will last longer, and looks better than it is supposed to look. However, the chemical can cause allergies for many people.  We do not advocate using any chemicals.  Enjoy the healthy scallops.  Oh, by the way, our dry scallops are not soaked in bleach.  That is why it is not pure white.  It is creamy white.
