This Miso Paste has a little added boost into fermentation. By covering the soybean miso with Sake Kasu (lees), this will serve 2 purpose, to create tight anaerobic areas for miso fermentation, and to add more flavor to the Miso.
Handmade Miso has no chemicals or additives. Only 3 ingredients: Organic Soybeans (Non-GMO), Rice Koji and Real Sea Salt. This miso will keep on fermenting inside the refrigerator, giving you continuous immune creating nutritional natural food. You can enjoy deeper fermentation taste as time goes by. The older the miso the more beneficial koji bacteria for your health.
