Dry Scallops Sashimi means there is no chemical volumizer used. The chemical typically used is sodium trypolyphosphate. When this chemical is used, the product will last longer, and looks better than it is supposed to look. When cooked, you might have noticed lots of water coming out of scallops. That is the chemical, and the product becomes the original smaller size. Our scallops will not shrink. You can eat raw or cook. Enjoy the healthy scallops. Oh, by the way, our dry scallops are not soaked in bleach. That is why it is not pure white. It is creamy white.
